hydrogenated oils ban in effect at the Hayes' household

so, i try not to be a food nazi (as ryan puts it), but the other day i was surprised at what i had in my kitchen. the foods in general were not bad (tortillas, whole grain crackers, high fiber cereal, etc) but the dumb food companies slipped in a few non-food ingredients into my food that i don't want to eat. seriously, food doesn't need hydrogenated oils or corn syrup to taste better and you body doesnt need it either.  i was just annoyed that i can't find normal foods with decent ingredients in them (with exception of going to the natural foods store and paying a bunch more and not always getting a healthier product.) i have a list going of things i am going to experiment with making to help at least eliminate hydrogenated oils.

as a side note, it's not just hydrogenated oils i am annoyed at. i am annoyed at the fact that crackers, salad dressing and other stuff has 100 ingredients in them. i know i can make healthier (and cheaper) and equally tasty alternatives. here's to the start of my quest...starting with HOME MADE WHEAT THINS!!!

WHOLE WHEAT CRACKERS (link)

1 1/2 c whole wheat flour
1 1/2 c all purpose flour
1/4 c flaxseed meal
3/4 tsp salt
1 c water
1/3 c olive oil
salt and garlic salt for sprinkling

Preheat oven to 350 F/180 C.  Combine ingredients until just blended.  Divide dough into quarters and roll between two pieces of wax paper or parchment paper as thin as you possibly can, like a wheat thin.  If dough is a little sticky lightly flour it before rolling.  Place each rolled quarter of dough on an ungreased cookie sheet (you can bake it right on the parchment paper if you want but I reused mine for rolling).  Score with knife but don't cut all the way through.  Poke holes with fork to give professional-cracker look.  Sprinkle with salt and/or garlic salt.  Bake for 15-20 minutes or until brown and crispy (tap them with a fork to check).  Cool a bit and then crack them apart by hand.  If they are bendy at all and don't crack apart easily, put them in for another 5 minutes.


turned out good.  cora never noticed a difference and she kept on asking for more.  they are good with cheese, salsa, dip, or plain.  yummy.
