1 c butter
1c sugar
1 c brown sugar
2 eggs
1 tsp vanilla
2 c flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 1/2 c oats
1 c chocolate chips
Mix. 375 for 8-10 min.
*I just made these. They are still warm. Thanks for the recipe Liesl. The only changes that I made were that I halfed the amount of white sugar and I used dark brown sugar instead of regular brown sugar. They were sweet enough in my opinion, but I like salty cookies (I may have slipped in a little extra sprinkle of salt too.)

Peanut Butter Oatmeal Cookies
non-stick spray
1/2 c all purpose flour
3/4 c whole wheat flour
1 c quick cooking oats
1/2 tsp baking soda
1/2 tsp salt
3/4 c light brown sugar
1/3 c butter
1/3 c creamy peanut butter
1/4 c buttermilk
Preheat oven to 350. Spray a cookie sheet with non stick spray. Whisk together the first five ingredients (through salt) in a medium mixing bowl. In a large mixing bowl, beat together sugar, butter, peanut butter, and buttermilk. Stir in flours mixture until a soft dough forms. Shape dough into walnut sized balls and place on prepared cookie sheet, 2 inches apart. Flatten gently with the back of a fork. Bake for 10 to 12 minutes. Cool on a wire rack. Makes 30 cookies.
These are really good and chewy. We really like them in our house. We even freeze them, but that obviously makes them hard until thawed out.
