Peanut Butter Oatmeal Cookies

non-stick spray
1/2 c all purpose flour
3/4 c whole wheat flour
1 c quick cooking oats
1/2 tsp baking soda
1/2 tsp salt
3/4 c light brown sugar
1/3 c butter
1/3 c creamy peanut butter
1/4 c buttermilk

Preheat oven to 350.  Spray a cookie sheet with non stick spray.  Whisk together the first five ingredients (through salt) in a medium mixing bowl.  In a large mixing bowl, beat together sugar, butter, peanut butter, and buttermilk.  Stir in flours mixture until a soft dough forms.  Shape dough into walnut sized balls and place on prepared cookie sheet, 2 inches apart.  Flatten gently with the back of a fork.  Bake for 10 to 12 minutes.  Cool on a wire rack.  Makes 30 cookies.  

These are really good and chewy.  We really like them in our house.  We even freeze them, but that obviously makes them hard until thawed out.

Yummy. Megan, you've been busy lately! I need to do a lot of cooking to try out all of your recipes. The only bummer is that I'm trying to only use what is in my cabinets right now so I don't have to move it...when ever I actually move.
