Black Bean Burritos

My friend gave this recipe to me.  She makes them ahead and freezes them like store bought frozen burritos.  They are WAY better than store frozen burritos and I feel good about stocking the freezer with these burritos for Ryan (and me and Cora).  I doubled the recipe so we had dinner one night and a bunch for the freezer.


Black Bean Burritos:

1 (15 oz) can black beans, drained
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper
1/4 cup finely chopped red pepper
1 large garlic clove, minced
1 T chili powder (I use paprika)
1 T veg. oil
1/4 tsp dried oregano
1/4 tsp cumin
1/8 tsp salt
1 (4 oz) can chopped green chilies
8 tortillas
shredded Monterey Jack Cheese
Sour cream and Salsa (optional)

Place beans in a 1 qt. microwavable bowl or dish; mash to desired consistency.  Add onion and next 8 ingredients; stir well.  Cover with a paper towel and microwave for 6 minutes, stirring every two minutes.

Spread mixture in tortillas and top with cheese, sour cream and salsa.

When I make them for freezing, I add the cheese inside with the bean mixture.  I also recommend doubling the recipe.
